#MeatlessMonday-Pumpkin Flax Chocolate Chip Waffles #recipe

These are a family favorite. Even the cat loves them (kidding!). They freeze well and can be microwaved or toasted. The added pumpkin and flax meal gives them an extra boost of nutrition!

Pumpkin Flax Chocolate Chip Waffles

Beat:

3 egg whites until stiff peaks form

Combine:

3 beaten egg yolks
1-2/3 cups buttermilk
1/2 cup canned pumpkin
1 cup chocolate chips
3T oil

In a separate bowl, combine dry ingredients:

1-1/2 cups flour
1/2 cup ground flax meal
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Stir dry ingredients and pumpkin mixture together, gently fold in egg whites.
Cook in waffle iron. Can be frozen
